CREATION IN THE KITCHEN
Advice from Maître Prunille
Dried fruits, on their own straight from the package or to make that special difference in the kitchen: a real gift from the gods!
The term « dried fruits » includes fresh fruits that have been naturally dried and also nuts and seeds. As all dried fruits have lost most of their moisture content, they have many features in common. However, they are also all subtly different: try them all to get the full range of flavors.

Dried fruits are great on their own or in recipes.
Original cuisine
With a variety of tastes, flavors and textures, they’re a real godsend in the kitchen. They give a touch of originality to savory dishes and brighten up the monotony of everyday meals. Their combination of sweetness and flavor makes them a number one choice for desserts: cakes, sweets, fruit salads, stewed fruits, confectionery, müesli.

This sweetness also makes them perfect for subtle, smooth sweet-and-sour recipes, for salads, with cereals, vegetables and even meat. Dried fruits are excellent eaten with raw or with cooked fruits and vegetables and give rise to some fantastic combinations. Pine nuts bring out the flavor of lamb’s lettuce salad; walnuts make the perfect marriage with chicory; pistachios go well with red cabbage and toasted flaked almonds blend in with stewed apples, pears or apricots.

For meat dishes, try prunes, dates, figs and raisins with guinea fowl, rabbit or roast pork.
