Sashimi bowl with prunes

  • 15 g of Maître Prunille prunes
  • 15 g of ribbon zucchini
  • 15 g of red cabbage
  • 30 g of cooked basmati rice
  • 30 g of raw salmon
  • For the Prunes Mayonnaise:
  • some Maître Prunille prunes
  • 10 cl of sunflower oil
  • 1 egg yolk
  • Salt and pepper
  • Wasabi shards


Step 1

Place 30 g of previously cooked basmati rice in a bowl.

Step 2

Add 30g of raw sashimi-style salmon, 15g of sliced ​​courgette (zucchini) and 15g of sliced Prunes of Agen.

Step 3

Prepare the Prune Mayonnaise, making sure that the ingredients are at ambient temperature: mix the egg yolk, a little bit of salt and pepper, whip, pouring in gradually the oil to thicken the mayonnaise. Blend the Prunes until it forms a paste, stir it into the mayonnaise and put 2 tablespoons of mayonnaise in the bowl.

Step 4

Finally, sprinkle with wasabi pieces.
